Combine sugar, water, and lavender in a small saucepan. Simmer gently for 5–10 minutes, stirring, until sugar dissolves and the lavender infuses. Strain and cool. Keep refrigerated up to 1 week.
Directions for Hot Lavender Latte
Brew 2 oz espresso into a mug. Add 1 tbsp lavender syrup and 1 tbsp vanilla syrup (if using).
Steam 1 cup milk until hot and frothy (about 140°F / 60°C). Pour steamed milk into the espresso and syrup mixture. Stir gently to combine.
Garnish with dried lavender buds or whipped cream if desired. Serve immediately.

Fill a glass with ice.
Add 1 tbsp lavender syrup and espresso. Pour cold milk over the mixture. Stir well to combine.
